  1. Line an 8x8 inch pan with parchment paper, leaving overhang on sides.
  2. In a food processor, pulse dates until they form a sticky paste.
  3. Add almonds, cashews, and walnuts. Pulse until coarsely chopped.
  4. Add oats, chia seeds, honey, vanilla extract, and salt. Pulse until mixture sticks together.
  5. Transfer mixture to prepared pan. Press down firmly and evenly with your hands or a spatula.
  6. If using, melt dark chocolate and drizzle over top.
  7. Refrigerate for at least 2 hours until firm.
  8. Lift out using parchment overhang and cut into 16 bars.
  9. Store in airtight container in refrigerator for up to 2 weeks.
  10. Great for grab-and-go breakfast or pre/post workout fuel.
